The Nutrition and Metabolism Course follows the vocation of the Faculty of Medicine of Ribeirão Preto in training highly trained professionals to deal with health problems, people and the community. The Faculty, its Hospital das Clínicas and affiliated institutions offer excellent conditions for training professionals in Clinical Nutrition, a fact considered in the pedagogical project of the course and which has a favorable impact on the profile of graduates.

The course is full-time, with a duration of five years, divided into three blocks: basic, intermediate and application. The basic block (propaedeutic) consists of introductory disciplines, necessary to support specific learning, related to the study of the organs and systems of the human body, with regard to their form and functions. It also includes important content for the understanding of health and disease and human relationships, some already addressing topics of nutrition and nutrients. The intermediate block, fourth to eighth semester, is aimed at teaching nutritional properties and food transformations; interaction of food with the human body in different life cycles, physical activity, health promotion and disease prevention and treatment, both individually and collectively; and management of meal production units. The last block, the application, consists of practical learning in service, through supervised internships at the HCFMRP-USP/FMRP-USP/FAEPA Complex and in health and food and nutrition services linked to the City Hall of Ribeirão Preto. Internships are divided into three major areas of Nutrition: Clinical Nutrition, Public Health Nutrition and Administration in Food and Nutrition Units, which take place during the last year of the course.
