Program Purpose The purpose of the Nutrition Sciences Program is to educate students in the multi-disciplinary area of nutrition science in a manner emphasizes the mechanistic role of nutrition in health and disease. The program requires course work in communications, advanced nutrition, biochemistry, physiology, statistics, and cell biology. The program has 3 broad goals; prepare masters degree graduates to be successful at R&D positions in biotechnology, nutrition industry, academic research, advance an existing career in dietetics for registered dietitians who desire to progress to leadership positions or clinical research, provide multidisciplinary education that will allow students to excel in professional school (medicine or dentistry) or graduate school in nutrition or related field. Learning Outcomes Program graduates will demonstrate a mastery of key concepts in the following areas of nutrition: nutrition biochemistry, micronutrient metabolism, macronutrient metabolism, research methods and statistics, nutrition and health communications, cell biology, and, physiology. Program graduates will be able to integrate scientific information and research into practice and their own research applications. Program graduates will demonstrate effective communication of nutrition information using written reports, professional presentations, multimedia approaches, and technical research formats. Program graduates will understand professional, academic, and scientific ethics. Program graduates will demonstrate an ability to self educate through literature review and analysis, possess good general research skills including hypothesis testing and experimental design, and learn technical laboratory skills relevant to modern nutrition clinical and/or basic research.
